This is a really quick and really simple dish that works well on its own or as an accompaniment to another spicy dish.

Ingredients

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2

Method

  1. Finely chop the garlic and red chilli and roughly chop the coriander. Slice the spring onion and put to one side. the flavouring ingredients
  2. In a saucepan over a medium heat, pour in the sesame oil and fry the garlic, chilli and ¾ of the coriander for 1 minute. cooking the flavouring ingredients
  3. Add all the liquids in to the pan and bring it up to the boil. adding the stock
  4. Add in the noodles, turn the temperature down so that the liquid is at a simmer and cook the noodles for about 3 minutes until they are soft and tender. Then put in the spring onions and stir them around. cooking the noodles
  5. Bring the liquid up to the boil to heat the spring onions and then serve, garnishing it with the remaining coriander. the finished Thai Noodle Broth
